Fruit Bars

  • 3/4 cup Giusto’s Whole Wheat Pastry Flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 2 1/2 cups oatmeal
  • 1 cup bland oil
  • 1/2 cup nuts, dates and/or apricots, prunes
  • Crushed pineapple
  • A little thickening

Mix all dry ingredients. Use the fruit of your choice and make a little mixture by cutting up the fruit and adding thickening. Simmer until the fruit is cooked. On the bottom of the pan, put a layer of the dry ingredients mix, then the thickened fruit mixture, and top with a layer of the remaining dry ingredients mixture. Now bake at 350 degrees for 30 minutes. Let cool and slice into bars.
